Blondie with white chocolate and raspberries

Yesterday my boyfriend turned 30, and in Denmark there is a tradition that you bring cake to your work place on your birthday. In Denmark we always find an excuse to eat cake 🙂 I choose to bake a blondie which is a brownie but with white chocolate instead and then I also added some fresh raspberries to make sure the cake wouldn’t be to sweet. But it can be made without or with other fruits or nuts. Summer in a cake

Who doesn´t like summer? I especially like summer as we have something in Denmark called ”Koldskål” which is a thin kind of yoghurt made out og buttermilk, lemon, eggs and yoghurt. And you’ll eat it with strawberries and some small cookies. I think that cake sometimes in the heat can be a bit too much, but in the other hand I can´t stop eating it, so I was therefore thinking to combine this lovely thing Koldskål in to a cake. Homemade granola

One of my favourites for breakfast is yogurt or shrimp with granola or muesli. Especially homemade granola, so you can decide what’s in it. My version contains nuts, seeds and freeze dried berries. Granola 150 grams oatmeal 25 grams of linseed 25 grams of pumpkin kernels 25 grams of sesame seeds 25 grams of chia seeds 25 grams of quinoa 50 grams nuts (almonds or hazelnuts) 50 grams of honey 20 grams of lyophilized berries (eg raspberries, strawberries, blueberry goji berries) Turn on the oven at 175 °C.
